Today was one of those days here in Charleston — rainy, unexpected, and full of little moments I never saw coming. So tonight, I’m leaning into something simple and soothing: packing for my trip to Italy, turning on Hulu, and making two delicious, throw-together recipes that are perfect for a quiet night at home.
Nothing fancy. Just comforting food, a soft pause, and the reminder that sometimes the loveliest nights sneak up on us when everything else feels a little sideways.
✨ Recipe One: The “OMG This Is So Good” Wasabi Salmon & Tuna Quinoa Bowl
It’s spicy, savory, a little smoky… and it makes 3–4 servings depending on your hunger (and how much you snack while cooking — no judgment).
Ingredients
1 can Fishwife tuna in oil
1 can Fishwife smoked salmon, drained (truly next-level delicious)
1 tbsp S&B wasabi (the refrigerated tube!)
1 tbsp Momofuku Chili Crunch
2 tbsp lime juice
1 cup cooked quinoa
1 cup warm, shelled edamame
A pinch of salt
Directions
Combine everything in a large bowl and mix well. Taste and adjust the heat or lime as needed. It gets even better as it sits, making it perfect for leftovers tomorrow. Reheat in the microwave for about 60 to 90 seconds.
