Isn’t it something how a simple plate of food can lift your spirits and nourish your soul?
This morning, I made myself this bright and beautiful brunch—a little reminder that joy is something we can create for ourselves, one colorful bite at a time.
On the plate:
✨ Red (okay, let’s be honest—purple) onion
✨ Sweet green and red peppers
✨ Mushrooms
All sautéed lovingly in olive oil, kissed with garlic salt and a sprinkle of parsley.
Then came the eggs: two scrambled gently with creamy cottage cheese folded in, and one cooked just right with the yolk still golden and whole. A few slices of avocado on the side, because - of course.
The result? A plate full of love, color, and comfort.
Food like this isn’t just delicious—it’s healing. When you slow down and cook something with intention, you’re not just feeding your body. You’re honoring your heart. You’re stirring in hope. You’re saying, I deserve to feel good today.
